And so it is time for the first (perhaps) monthly RET-chef of the month award.
This month we're focusing entirely on dishes containing, not however limited to containing, fish.
As originality will be ranked high please do NOT mention fish-sticks anywhere in your posts.

all competitors must post recepies!
(the usual rantings and observations are of course also welcomed)

my two favourite dishes in this category would definately be:

1) salmon marinaded in lemon, steamed. served w/ whitefish roe sauce and potatoes.
2) grilled swordfish!

I hate fish, and sna knows it.. I won't be submitting any recipe this month then.. Maybe next time (I do know how to cook though :))

CHEESE FILLETS DELIGHT - (not fish sticks)

Needed:

frozen fish fillets 2lbs
milk 1/2 cup
salt 1 tsp
fine cracker crumbs 1/3 cup
fine grated cheddar cheese 1/3 cup
fine grated mild white cheese 1/3 cup
margarine, melted 2 tbsp

Directions:

Measure fish at thickest part. Cut fillets into serving size portions. Combine milk and salt. Soak fillets 3 minutes. Combine cracker crumbs and cheese. Drain fillets and roll in crumb-cheese mixture. Place in grased baking dish. Sprinkle any remaining crumbs over fish. Dot with margarine. Bake at 450 F, until fish flakes easily. Allow 5-7 minutes per cm for fresh fish, or 10-12 minutes per cm for frozen fish.

Makes 6 servings.
