What do you mean by outdoor living? It's not clear to me. If you can outline exactly what you mean, and you promise to add stuff to it over time, I can make it.

I'm thinking of a reference/resource library mainly of youtube videos, useful sites to encourage individuals and families to go out into nature and get away from city life for a while.

It's not for any armageddon type scenario but so folks would enjoy the outdoors more, and encourage folks to get involved with scouting, hiking, camping, hunting, fishing over a week/weekend, emergencies such as if snowed in/stuck in a car or cabin somewhere etc.

Also give folks some ideas on casual hobbies that get a person outdoors.

It would from a search engine perspective also presumably attract more traffic to the site from people who enjoy the outdoors. Such tend to be more independently minded and generally useful people in any struggle.

The sub-forum request is because it would make it easier to organise as there would then be threads categorised into these and other topics where things can be covered in quite some detail, rather than posts being all mixed up:

First Aid
Fire
Shelter
Various useful plants for medicine, food etc
Camouflage
Tracking
Signalling
Fishing
Hunting
Making weapons such as bola, atlatl, slings, bows etc
Rafts
Knots
Skinning
Tanning
Leatherworking
Skygliding
Parachuting
Emergency kits

I'd look at developing a thread or two each week or so.
