CHOCOLATE ICING
My Final Product
Okay, I made cupcakes last night and I refuse to eat packaged icing. I made up this recipe last night and this morning there was a rather large dent in the cupcake population.
Here is what you need:
3oz Milk Chocolate
3/4 cup Butter
3-3/4 cup Powdered Sugar
1/2 cup Dutch Cocoa
1tspn Vanilla Extract
1tspn Almond Extract (optional)
1/2+cup French Vanilla Liquid Coffee Creamer (More or less to the consistency you prefer)
On low heat Melt the butter and Milk chocolate in a small saucepan. In a medium sized bowl blend the powdered sugar and dutch cocoa together. Add Vanilla and Almond Extract to melted chocolate mixture and add into the dry sugar/cocoa mixture. Begin to blend ingredients together and slowly add creamer until the icing is to your preferred consistency. This icing does contain the creamer so it should be refrigerated.
My pastry bag is M.I.A. so instead I just put the icing into a ziploc bag, cut the corner off, and apply. I like to put chooped buts or slivered almonds on top to add more appeal, but you can really do whatever suits you!
