I grew beets in my garden this summer. And, despite leaving them in my husband's care for 3 weeks while we went to visit family in California and another 3 weeks while we went to Europe they survived. I didnt think I would have time to do anything with them but then last week figured " what the heck" and pulled them up, cut off the tops and decided to make pickled beets.
I boiled them until tender and then ran cold water over them to help slip off the skins and then I sliced them. I couldnt find my grandmothers pickled beet recipe so I ended up making a combo of recipes from about 4 different sources. Basically it is vinegar, water, sugar, cloves and allspice boiled and then poured over the beets.
I filled about 8 quart jars with beets and even got the tops to seal on the canning jars which really made me feel great since I have had trouble with that part in the past. And any of you who have seen jars of pickled beets know there is not much of anything prettier pickled than a beet.

Here's a good salad recipe for your beets:
greens (lettuce, spinach, etc.)
can of garbanzo beans (kidney beans or black-eyed peas are also good)
sliced beets
crumbled goat cheese (or feta cheese)
one small chopped red onion
olive oil
chopped bacon (optional)

I will try that. Unfortunately my husband doesnt like my pickled beets, or any beets for that matter. He also dislikes Squash, which I think steamed and covered with a bit of melted butter are better than ice cream. So I will be packing some of my jars in bubble wrap and sending them to my dad. He likes them. Hopefully they wont break open in transit and make some stupid postal worker think I am shipping parts of bloody bodies.....
I have given a few jars away to some neighbors. THEY also like my pickled beets.

Does anyone have a good recipe for chile sauce??? My mom makes some and cans it every year, but hers is just a little to hot for me, and I can't eat it. I like mine on the sweeter side, and am always looking for some new recipes! :)

Good for you April! I love pickled beets! You should eat the beet greens as well. Beet greens are considered among the best greens there are for salad.
My mother in law put up a zillion jars of tomato sauce. Her half sour pickles come out real good too. as well as Polish dills (not kosher dills).
I don't know if you have Agway there, or someone else who carries "Mrs. Wages," but there are pre-made seasonings by Mrs. Wages for spaghetti sauce and half sour pickles and Polish dills.
