Overwhelming embarrassment drives one to take such measures. Unfortunately, he couldn't successfully dispose of all the evidence of this incestual relationship

No, no, no he killed his grandmother and ex-girlfriend (the mother of his child). The girlfriend was living with his grandmother. At the bottom of the article it states that the police don't know why he did it.

I understood that part of it
The girlfriend was living with his grandmother.
It’s perfectly logical. He had 2 grandmothers and his other girlfriend happened to be renting a room at the home of one of them which is quite co-incidental. When his 2nd girlfriend found out that he knocked up his grandmother, she coerced him to save face by parting out grandma. What’s there to misunderstand here?
At the bottom of the article it states that the police don't know why he did it.
The police seldom understand things. In this case, it’s way over their heads

OCEAN TOWNSHIP, New Jersey (AP) -- Authorities said a New Jersey man decapitated and cut off the hands and feet of his grandmother and former girlfriend Tuesday.
The first sentence tells who was killed.
Rosario Miraglia, 31, - This is the killer. -called police – turned himself in -after emerging from his grandmother's two-story home covered in blood, said county prosecutor John Kaye.
When police entered the home they discovered the bodies of 87-year-old Julia Miraglia –his grandmother - and 31-year-old Leigh L. Martinez. –and ex-girlfriend, also the mother of his child-Officials said Martinez was the mother of Miraglia's child and lived with the older woman.
A carving knife and a meat cleaver were found on the first floor next to the grandmother's body.
"It's one of the more disturbing (crime) scenes I've seen," said police detective Lt. Antonio Amodio.
Miraglia was charged with two counts of murder and was being held in lieu of $2 million bail.
"We know the who, the what, the where and the how. We don't know the why," Kaye said. –the police know the killer, the victims, the location and method of murder but they don’t know why, yet. –
Plain as day. What is happening is that you’re drawing your own conclusions as to WHY he did it. There isn’t anything in the article that would lead to your conclusion. Are you acquainted with the fellow in question?
