Monday thru Saturday I usually eat a lean breakfast, but on Sunday I like a tasty, cholesterol-laden omelet.

Start off with a quality Calphalon (or equivalent) fry pan with cover.
Add a some butter (real butter) over medium heat.
Mix four eggs well (add a touch of water) and add to pan.
After the eggs cook a bit add six strips of bacon and some Cabot cheddar cheese. Cover.
When the omelet starts to get firm add some Pace picante sauce or salsa.
Add some Sylvia hot sauce or touch of tabasco if desired.
Fold omelet, turn off heat and recover for a few minutes.
Add salt and pepper.
