because back in the day the catholic clergy made a deal with people to kick up fish sales in markets.
from a less conspiracy standpoint-- not eating meat on friday is an affirmation of your religion by sacrificing something, but to get good nutrition they let you eat fish.
bottom line is, theres no spiritual or significant symbolism (that i know of) to choosing fish acceptable over other meats.
just go discordian, eat a hotdog on a bun every friday, it conteracts a dogma from all major religions
no meat on friday-catholic
no meat of pork-jewish
no meat-many asian/indian religions
no hot dog buns-discordians
