Does anyone have any available online resources concerning Hermeticism and Alchemical symbolism? I've just developed an interest in this field and I'm having difficulty starting off.

That site has a lot of info, plus stuff about Alchemists that are openly practicing today, so you might like to check them out aswell. As for the quaility, it seems good, but I realy can't vouch for anything in this area.
transmutation is impossible through chemisty means. you can do it with a proton gun, and a few other peices of equipment, but not through any method that these people are likely to suggest.
there is a reason why almost no one practices it anymore, and why those who do are very poor. it doesn't work.

I noticed a book at the book store today
I'd forgotten about this, I read it a while ago and it was a good read for me, had a braoid range of stuff, pretty educational, I'd recomend it, but there might be other more worth your time. Many thanks. I will definitely look into these documents. I just recently ordered Julius Evola's The Hermetic Tradition. Hopefully this will provide some insight.
Does anyone else know of any resources on inner spiritual and metaphorical alchemy?

Thomas Cleary's translation of The Secret of the Golden Flower is a great start, just never mind his psychologizing(sic?). Very powerful technique.
The "art" is not "lost"...
Don't know about online resources. But there are a few useful books under the field of sufism, which concerns itself with higher development and an inner alchemy.
I'd recommend books by Idries Shah, such as
"The Sufis" and "Oriental Magic." The former discusses various symbols and groups in history centered around alchemy.
Also the book "People of the Secret" by Ernest Scott (Octagon Press).
