I may be wrong, but I understand the Talmud was written early in the first millennium. This is a long time after the agreement between God and his chosen people, spoken about in the Old Testament. The Talmud is not of divine inspiration.

So what stopped the people mentioned in the quoted text above from simply going back and adhering to the old scriptures ? Getting converted to Christianity was not at all necessary. Then why did they do it anyway ?

Yeah, I think it was written down then, but I'm pretty sure that the Talmud is a compilation of the Jewish Oral Tradition, while the Tora is the written tradition.

Around that time they just decided to get their shit together into a lot less books.
