I'm going to Korea in about 2 months with my family. What exactly is there to do? I mean, I can figure out sightseeing stuff, but what are some fun things that I won't find out about in a tourism book? In particular, what's the nightlife like there?

I'm jealous, I've been around quite a bit in Asia but never had the chance of going to Korea.
There's probably quite a few places to visit in the Seoul area, like old royal palaces, temples and other sights on an historic value.
I know there's great scenery as well, so you should probably go out of the cities and explore a bit.
I have no idea on the legality, or even safety of this, but going up to the border would be pretty interesting.
I doubt that the "meeting room" would be open to public, though.

It's legal under a certain tourist agency. And yes, they'll allow you to see the conference room as well.

Interesting tidbit:
Korea has many night-time activities. Although the military-imposed midnight curfew has long since vanished, most restaurants and bars are still required to close their doors at midnight. However, certain hotels and designated "tourist" clubs can stay open later, and some clubs remain open illegally, posting sentries with cell phones outside to unlock the doors for late night partiers. In 1997, Itaewon was designated a Special Tourist Area, allowing many establishments to remain open 24 hours.
