Medic? You wouldn't have to be like a PHD or anything, just a very competent and qualified medical person. Might help to be ex-military medic or ex-paramedic.
Depending on the location, they might need a multilingual translator. African, south american and asian languages primarily.
If it is for some kind of production, then audio technitions would probably be needed. Hundreds of hours of audio recording go into one hour doco's.
Edit: Some larger groups might bring along a dedicated cook, though usually they have another member who does the cooking as well as another job. Steve Irwin used to be the main cook for his crew when they were making a documentary.
