I read somewhere that i should add butter to it to keep it moist and flavorful cuz its really lean. Should I?

I was thinking of putting red onion, romaine lettuce, and habanero bbq sauce I picked up from Sprouts on them. I have a choice of gouda, provolone, cheddar, and swiss for the cheese. I might put some bacon on them. Any ideas or advice? Never had bison before.

Well all of those things would be good. The gouda would match well with the flavor of the bison. That being said... since its your first time, I recommend you don't use any! If you want to experience all that is bison, eat it without all of those things. Or at least, eat one without, and one with all the condiments you want.

To give more detail, you should try the following:
- Make the burgers as good as you possibly can. Grill it perfectly to medium rare.

- Use a good bun (I like kaiser or sourdough), toasted lightly.

- Put the burger on the bottom part of the bun, and grind a generous amount of pepper on top (though my grinder has black, white, and red peppercorns at the moment and I use those - it just doesn't matter really).

- Spread a thin layer of really good quality mayonnaise on the top half of the bun (I make my own, but if you use store bought mayonnaise, just make sure its not 'light' and its a decent brand).

- Enjoy!

The most essential part is how well the burger is cooked. It should be grilled. The outside of the burger should be cooked well, not charred, but cooked well and fast. The inside should be cooked, red, and warm - that is, medium rare. Hell, thats the rule with any burger. Cook it perfectly and it will taste great as long as its made with good meat.

Anyway, the way I described preparing it was first introduced to me by a chef at the first restaurant I cooked at. Its sooo good, yet so simple. It really allows the flavor of the burger to shine. And in this case, the bison will really give you a great experience in trying something new.

Interestingly enough, there's a show on the Food television network in the USA called "Good Eats", where the host takes a topic (like beef), and then educates the viewer about it, shows recipes, different ways of using it, dispels myths and really just gives you a lot of great things to do with whatever the subject of the show is that episode. I've only seen a couple of episodes, but the ones I've seen have been just great. Informative, entertaining, and you come out of them with some really tasty, easy to remember recipes that are a cinch to pull off.

Anyway, the method of burger preparation I shared with you, was also on an episode of "Good Eats" apparently. And it makes sense, because its the best way to eat a burger in my opinion. Though its nice to have a burger loaded with other things, the way I shared is something I believe everyone who loves food (especially good meat) should try sometime.

a little late, but bison is really lean.

so yeah if you are making your own patties add some butter.

or if you dont mind altering that beautiful bison meat you can do what i do when making burgers from lean meat. add generous amounts of ground bacon.

like a slice an a half for every 1/4 lb of meat.

makes them moist with BACONY goodness. after that do what sambob said to the T. the man seems wise. after all the only thing that should go on a burger, in my opinion is onions, pickles, sauce, an cheese.

Bison Burgers are FANTASTIC- I usually at least have a few kicking around in the freezer.

Nope, I've had an Ostrich burger before, though... it was dobro, if ya catch my drift :D

A little mustard wouldn't go amiss.

I'd love to get my hands on some Ostrich. It's supposed to be really tender.
