Personally, I say "ethnic European" or "ethnic African" when trying to be more politically correct. It makes a lot more sense than "Caucasian" or "African-American", considering most white people aren't from the Caucasus mountain region and most black people aren't Africans who moved to the US.

There's a lot of weirdness surrounding the concept of words to describe race. It used to be there were either three or four major races depending on who was counting: Negroid (black), Caucasoid (white), Mongoloid (East Asian), and American Indian. Now, they often consider Hispanics to be a race, but "Hispanic" just means "spanish-speaking". You hear "Latino" a lot too, but that just means "Latin", which again refers to the language group rather than any race. But there is no latino race anyway, since most Latinos are either European, American Indian, or a mixture of the two.

It's all very unscientific.
