just pan-fry 'em and put em in some of them maple-syrup stores canned beans. I've always liked pork and beans, personally, even if it is a lil too easy to really call it a recipe lol.
Also, don't eat pork too often--- it leads to heart disease quicker than other meats, I believe. Also prolly part of the reason why the african american male population has such a low life expectancy; moulies ought to lay off the ribs once in a while :(.

Make sure you put cuts into the rind, it'll get nice and crispy that way.
Pan fry them to start them off to get a bit of color on them. Flatten a few cloves of garlic and press them on the top. Cover in rosemary, salt and pepper and finish them off in an oven.
I'm a big fan of brining pork. Essentially one part salt, one part sugar to two parts water and whatever seasonings you like. Marinade for a few hours (or overnight), and they're damn tasty. Apple cider seems to work well, and if you use hard cider, you get to drink the rest. It also keeps the chops moist during the grilling/broiling/pan frying, which, given most people's propensity for cooking pork to a texture something like a paper towel, is a great thing.
Here's a site with some info (http://whatscookingamerica.net/Pork/BriningPork.htm) including amounts and timetables. I tend to wing it, but I wouldn't recommend that for a first time, lest you come out with chops similar to my first time brining (i.e., overly salty and all but inedible).
My grama browns them first, then fills the pan with apple sauce till it gets all hot and bubbly and puts them back in and like boils them almost in the apple sauce. Saucy goodness
