Why isn't it ever fried? I can't find a single recipe for a fried orange roughy; not that I need a recipe, I've got my own and it's marinading right now, but I can't figure out why nobody fries orange roughy? I can easily find recipes for frying tilapia, but not orange roughy at all; it's all baked. Is there a reason for this?
