Paper Mario And The Thousand Year Door
Mario Kart: Double Dash!
Resident Evil 4 (Wii version is best, Gamecube is the next best)

Except it was underpriced, and had a fair share of good games, and didn't base all of its selling on one game that wasn't that huge a hit.

This is true.
I remember buying my Gamecube like a year or so after release for $149.99 with a copy of Metroid Prime. Then a year later it was $99.99.

I got the same deal with the Metroid Prime. Money well spent.

And it didn't end there. I got Windwaker and Eternal Darkness soon after that. Both blew my mind. Especially Eternal Darkness... :)

Metroid Prime is one game i've gone back to at least 3 times and just could not get into. It felt so isolating. I don't know if you actually have interaction with anyone else in the game, but I felt like I was just walking around completely alone with not even any music playing in the game itself. I've heard the game was awesome so that's why i've actually tried to go back and play it more than once, but always quit at the same area (it's a sandy jungle type of area with enemies that come out of the sand).

Metroid Prime has some of the best music in any game ever.

I never noticed any to be honest, unless it was that spacey ambient music.

I got Windwaker w/ OOT & Master Quest with my Gamecube. I also bought Metroid Prime....didn't like Metroid Prime much. I thought the GBA Metriod game from that year was 100000 times better. Wind Waker was pretty fun for the first couple of hours or so..
Anyway, to answer the question...
If you like Animal Crossing, also get Harvest Moon: Magical Melody. Its like a combo of AC and a regular Harvest Moon game. I love it.
Super Mario Sunshine isn't that great, but if you can find it cheap like I did ($4), then its worth it. Theres a lot of gameplay and pretty graphics. Just remember that it won't change your life or anything.
WWE Day of Reckoning 1 & 2 are good if you are into wrestling game. Hell, even if you like fighting games you'll probably have some fun with either of those games.
Pikman 1 & 2 are cool games, and pretty unique.
Everything that has mentioned it good as well. RE4, Paper Mario, Mario Kart etc. etc.

What, that Rogue Agent shitfest? You'd be better off playing Timesplitters 2.
If you can get the necessary hardware together, all three of the big GCN/DS linkup games are good fun. Final Fantasy: Crystal Chronicles is good, particularly when you've got a little brother or someone to stick on bucket duty. Four Swords Adventures is classic Zelda with a competitive edge, and Pac-Man Vs. is pure retro nuttiness.
Viewtiful Joe is well worth playing. Plenty of style and excellent gameplay. Killer 7 has all of the former and none of the latter, but it's worth a shot if you appreciate the utterly bizarre.

He is right about it being spacey ambient. It went extremely well with the game, but it's not something I would listen to outside of Metroid Prime. Nowhere near "best music in a game ever".

Nowhere near "best music in a game ever".
Absolutely it is.
Whether you like the style or not, it's superbly composed and fits the mood of the game extremely well.
Also, all three of the Prime games have some of the best intro music ever:

I'm not saying it's the best, I'm saying it's among the best. If you disagree, I challenge you to name me five games with soundtracks that perfectly fit the mood of their respective game, and that you would put on without feelings of nostalgia for the game they came from being your primary motivating factor for listening.

Hold the challenges, we're not hunting pokemon here. I wasn't attacking your opinions here. I told you that the music fits the game perfectly. It's just that it is very hard to listen to outside of the game. And that is how I would rate an outstanding game soundtrack. Something you can listen to at any time, not just when playing that game.
Same goes for movies. Star Wars and Lord of the Rings both had epic soundtracks, but you'd have to be one hell of a nerd to actually listen to them when you're not actually watching the movies themselves. The audio loses much of its value without the visuals to accompany it. Like when you get out of the snowy cave in Metroid Prime and you get into your first large open area, the music kicks in. Absolutely stunning. However, if you were to play that same track on your ipod while walking to the grocery store, it wouldn't really work. Not for me at least.
There are very, very few games that have unique soundtracks which can be listened to outside of the game itself. Take Deus Ex. Perfect fucking soundtrack. Ever try playing it your car? Sounds boring and uninspiring. See where I'm getting at. Not to mention that ambient is a difficult genre. It only works with certain moods and in certain places.

That's all you need, really. If a piece evokes a sense of place and awe in you, then how could you not count it among the best game music of all time? Half the magic of stepping into Phendrara Drifts is that music. If Prime were given a typical first person shooter "rocking" soundtrack, that moment wouldn't be anywhere near as inspiring.
And I've listened to the Prime soundtrack on my own quite a few times. It's great music in my opinion, but I enjoy albums like Dead Cities, Von, and My Downfall, so it's not that far off from some of the stuff I listen to anyway.

Pretty much every good game achieves this.
Half Life when you finally surface.
Deus Ex had that eerie ambient tachno. If it wasn't for the music, the cyberpunk feel would have been completely lost on that game.
Carmageddon with the industrual metal.
Every final fantasy game.
Ever try playing Jet Set Radio with the music muted? It's just retarded.
I can name any good game here and each and every one of them would have an epic sound track.

I don't recall any music from half the games you mentioned.
Half-Life, as great a game as it is, I don't remember any of the music from it. I remember a few bits from HL2, but nothing from HL1. That could just be that it's been so long since I played HL1, but it's been probably five years since I played Metroid Prime and I can still remember the music from that.
The only Deus Ex song that I can recall is the opening title song. I have vague recollections of other section's music, but most of the music in that was just so similar it all blended together. It doesn't have what I would call an amazing soundtrack.
I certainly wouldn't call Carmageddon's soundtrack memorable either.
Final Fantasy, while I find most of them to be utter shit, I will admit they have amazing music. When I think of excellent game music, many FF tracks come to mind. Along with a few Silent Hill tracks, many tunes from Zelda, the entire Super Mario Galaxy soundtrack, and most of the music from Metroid Prime. And Saren's Theme from Mass Effect, along with M4 Part 2 if that counts. And the BioShock Main Theme (The Ocean on His Shoulders). I should stop now because I could probably go on all morning. Hell, there are even games I despise that I can admit have good music. I find the Halo series to be average as hell, but I can admit the main theme is top notch stuff. MGS2 was about the biggest gaming related disappointment I've ever had yet I still think it's main theme is amazing.
As for Jet Grind Radio, it had Rob Zombie in it, so I'm not even going to bother dignifying that with a response. I don't know if by saying "Jet Set Radio" you're trying to imply you've only played the Japanese version though. If so I'm going to assume it doesn't have Rob Zombie, and you should consider yourself lucky.
Also, not all good games have "epic soundtracks". I would say the vast majority of good games have good music, but there are plenty of good games that have shit music. Excite Truck has been one of my favorite racing games this generation, but the music in it was fucking pointless.

Well, I had forgotten all about Metroid Prime's soundtrack until you mentioned it here. So it's memorability is obviously taste related. And I like ambient music...
Half Life's music only started playing at key moments, like when something big was about to go down. Like when you surface for the first time and when you launch that rocket and such. It was absolutely superb.
Deus Ex has a most super soundtrack. Even Jeff Hunter can agree with me on that one, as I recall he was a huge fan of it.
And yes, I have only the Japanese version of Jet Set Radio, as most of my DC games. I only started buying DC games after it went bust and the imports trade kicked in. And then there is also the loads of downloads...
But I see where you're coming from. I'm believe Grim Fandango has the best soundtrack in existence. I listen to it all the time. Not everyone agrees though.

Jet Grind Radio had fucking Guitar Vader, man. Perfectly fucking mental Japan rock.
I also listen to Katamari Damacy's soundtrack rather often. And Ouendan. And Super Metroid, which is even better than Prime. And Earthbound.
