I acquired an iPhone approximately 2-3 months ago. No I did not steal it. I found it lying around somewhere, and it was locked anyways, so even if I did want to call the owner's associate, I would not be able to. Anyways this is not the ethics forum.

So we wiped it using QuickPwn and restored it to its original state. Unlocked it, Jailbroke it, etc. It is working fine, and I am really enjoying it. I also signed up with the iTunes store, so I could download their free applications. But this also involved giving them my name, address, credit card no. etc. But my friends reassure me it's safe, they won't attempt to come after me. Is this true or should I unsubscribe from apple? I really don't like them having my address.

And if I did unsubscribe, would they still have my information?

If you unsubscribed, they'd still have your information. It isn't worth doing at this point.

Prome is only against it because iTunes is not open source. He masturbates furiously to GNU/Linux

Prometheum is right; once you're in their database, you're there. Unsubscribing won't remove it. Even if it removes it from the active copy of the database, it'll still be in their backups -- probably forever.

Chances are Apple won't do anything about it unless the police contact them about the missing phone.

This makes no sense. What am I against, exactly? Deleting an iTunes account? I would actually be for that in principle, but I said that it wouldn't do any good for security here.

This post gives me a sneaky sense of deja vu.

Youre just giving them your info for buying stuff from the store. Think of it as your billing address, I made a fake account just to do what youre trying to do right now.
