In order of sickess/dusturbing violence: Elfen Lied, Gantz, Ninja Scroll, Samurai X, Anything on the sci fi channel mondays after 1 am.
Oddly enough some of the big shounen anime out right now like bleach and naruto can be quite violent at times.
If you're looking for blood and gore watch the first episode of Elfen Lied, you wont be disappointed.

Wicked City. A gal's nether regions turning into a giant mouth with rows of sharp fangs is enough to give me nightmares for years. :(

Gantz, maybe...
Yeah, I have watched gantz a few times now and there really isn't all that much gore as far as organs and guts etc, just lots of unconvincing blood. Besides, the producers decided to have the characters talk non stop in order to extend the series and keep the animating budget low thus decreasing the opportunity for violence...
Hellsing is pretty bloody.
Berserk is pretty cool too.
Not as bad as some others mentioned though Elfen Lied would be top from what I have seen I think.

Hellsing is pretty bloody.I dunno about the ova, but I've heard the hellsing manga described as violence porn.
While it may not be as bloody or gory as others, I'd also like to recommend Hellsing.
Well, Hellsing Ultimate anyways. I preferred it over the original series.
While I'm at it, some other not quite gory, but still fairly dark series I liked include Darker Than Black and, yes, Death Note.
But, I'm fairly new at embracing the anime genre, so yeah. :)
