is the universe infinite because its expanding? because if so, then hypothetically if you could pause time, wouldnt you be able to come to the "edge" of the universe?

and/or

could the universe be infinite in the sense that a circle or sphere is infinite? like if you took off in one direction, could it be that your perspective is a straight line, but in reality is a circle?

kind of like walking around the earth, if you start where the prime meridian meats the equator, every thing appears to be flat. but if you follow the equator, you will eventually wind up where you started even though it appears your walking on a straight, flat plane.

so if you took off from earth and went in a straight line, you could eventually w/out changing direction, come back to where you started?

try reading about Lucretius' spear.

But Dark energy is expanding the universe faster than we could ever reach the "edge" of the universe. Hell, and its only the known universe. it is possible that the universe (or Multiverse) is larger than we ever thought

In regards to your second question, it depends on the spatial curvature of the universe. If it has positive curvature, then its analogous to a circle as you describe, and if you go straight you will eventually loop back to where you started, and even if the universe is finite, it still has no edge. If it has zero or negative curvature, then this is not the case, and if the universe is finite you would eventually reach an edge, or end if you go straight long enough.
